Wakame (Alaria) is a large brown kelp which grows in the upper limit of the sublittoral zone. It has a wide distribution in cold waters and does not survive above 16oC. It is found in areas such as Ireland, Scotland (United Kingdom), Iceland, Brittany (France), Norway, Nova Scotia (Canada), Sakhalin (Russia) and northern Hokkaido (Japan). In Ireland it grows up to 4m in length and favors and wave-exposed rocky reefs all around the Irish coast. Eaten in Ireland, Scotland (UK) and Iceland either fresh or cooked, it is said to have the best protein among the kelps and is also rich in trace minerals and vitamins, especially niacin. It is usually collected from the wild and eaten by local people, and while it has been successfully cultivated, this has not been extended to a commercial scale. Ingredients for Miso soup with Tofu and Wakame (Alaria) recipe

  • 2 small onions, chopped
  • 2 carrots, sliced
  • 2 stalks celery- about 1 cup, sliced
  • 1 quart water plus vegetarian bouillon, or use stock ¾ pound firm tofu, cubed
  • 1 cup Wakame (Alaria), soaked in water to soften, sliced; or 2 cups chopped spinach or other greens
  • 2 cups any vegetable combination (chopped pepper, green beans, cabbage, mushrooms, zucchini, etc.)
  • 2 table spoons tahini
  • ½ cup red miso
  • Spike, salt, and pepper to taste

 

How to do Miso soup with Tofu and Wakame (Alaria) recipe?

  1. Put vegetable into pot with water or stock, and bring to simmer.
  2. Cook until vegetables are tender (about 8 to 10 minutes).
  3. Add tofu cubes.
  4. Remove ½ cup soup broth and combine with miso and tahini to make paste.
  5. Stir paste into soup.
